and left some really great gifts--thanks Santa!

MERRY CHRISTMAS

Christmas Eve

Nothing too exciting on the Jensen home front for Christmas this year; we just stayed home and had our own celebration. Christmas Eve we enjoyed a raclette dinner. It's a Swiss tradition (although we are not Swiss) where you have a tabletop grill to cook potatoes, meats, and various ingredients and then melt cheese over your portion in your own little "skillet."

It is sort of like fondue, and is way fun and yummy. We tried shrimp (a big hit) this time, brussel sprouts (NOT a big hit--but hey, a mom's gotta try!), and the traditional combo of potatoes, pickles, carrots. We also had some ground beef that I browned with some sun-dried tomatoes and onions. Everyone enjoys making their own combination of things and then trying out the different cheeses to melt on top. This time we had Gouda, Fontina, Jarlsburg, and Muenster. Bon Appetit!

It's snowing again! We are definitely going to have a white Christmas! I feel some snowshoeing coming on, but for now we are just preparing for Christmas with wrapping gifts and making cookies.

The Sights of Christmas

The Vegas snow has now officially become Utah snow. It started coming down at 11:00 this morning and stopped about 5:00 p.m. We have a lovely fresh blanket covering everything. Not fun to drive in, but very pretty to look at.

Our own snow dog.

Our little spruce looks so pretty with the lights shining through the powder.

Making candy . . . yummy, but dangerous for the waistline!

Global Warming

Breaking news today from all my friends in Las Vegas--it snowed! And not just your sissy flakes, it really came down. And as of 8:00 pm Mountain time it was STILL snowing! Of course, the town is practically shut down because there are no plows or salt trucks to take care of the roads.

Similarly, my mother-in-law posted pictures of the snow they got in Jefferson City, MO. Again, an anomaly. Not to mention the cold and ice storms in the Northeast that caused blackouts a few days ago.

We expect cold temps here in Utah, but this week is especially cold. It snowed on Sunday, and now it is just clear and COLD. Look at Sunday's temps! Yikes! What is going on with the weather?
